Potato Soup
There is snow falling everywhere in the United States right now, except where I live. Never where I live. I have snow envy. Ridiculous amounts. So, for all of you enjoying the absolute bliss of a world covered in sparkles, here is the perfect dinner recipe for you.
1 pound Mild Italian Sausage
1 chopped Red Bell Pepper (or yellow or orange, never green)
1 minced Onion
3 minced Garlic Cloves
3 pounds Yukon Gold Potatoes
1/2 gallon Chicken Bone Broth (or stock, or broth, whatever)
1/2 Cup Better than Bouillon Chicken
1 Trader Joe’s bag of baby Kale
1/2 Cup Sour Cream (or plain yogurt)
1/2 teaspoon Salt (or more if you’re wild about salt and don’t care about hypertension, there’s a bunch in the broth and bouillon so maybe taste it, cause you might not need it)
1/2 teaspoon Pepper
1 teaspoon Garlic Powder
1 teaspoon Smoked Paprika
In a very large stock pot or the largest of these pretty dutch ovens from Costco (I’m obsessed). Brown your sausage over medium high heat, breaking it apart with a wooden spoon. Sauté (who am I kidding, just mush it, mash it, stir it with a spoon) for about 6 minutes, then toss in the bell pepper, onion, and garlic, mix it all together for about 4 more minutes. Meanwhile, scrub your potatoes and chop them or peel them and chop them. You want 1 inch potato cubes. Throw them in to your meat, pepper, onion mixture. Then dump in your chicken broth, bouillon, and seasonings (double check your salt). Let simmer on low, or medium low if you have a weird cooktop, for about 20 minutes until potatoes are fork tender (this means you can gently press a fork into it, but you don’t want mashed potato soup, so they should be more on the firm side then the smushed side - if they’re smushed you’re doing it wrong and should probably just give up. I’m joking, it’s twenty minutes, they’ll be fine.
Now, add your sour cream - mix, simmer 3 more minutes. Turn off heat. Add your kale now, while it’s still hot, so it can get all soft and magicky.
Dish into bowls, add some crushed red peppers, cause yum, a little sprinkle of cheese if you’re a fan - cause it’s good, but you really don’t need it. This soup is awesome. You're welcome, your life just got a little better. Eat some rustic sourdough bread with this as well, you deserve it. Think of all those calories you burned shoveling the driveway.
